One good way to evaluate a contingency plan is to implement it for a day. For example if you have a contingency plan for handling your inventory ordering manually in case of a computer failure then pick a day and turn off the computers and see how well your manual process works.

Some plans are less disruptive than others so you probably won't be able to do this with all aspects of your plan, but seeing how the parts you can test actually function is probably a pretty good indicator for how the rest of the plan will work.
